Spiced Fruit and Chops
Ingredients:
- 4 pork sirloin chops cut 3/4" thick
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1 T cooking oil
- 1 6 oz package dried apples
- 1 med onion
- 1/4 cup golden raisins
- 3/4 c orange juice
- 3/4 c chicken broth
- 1 small jalapeno pepper, seeded and finely chopped
- 1 clove garlic, mined
- 1 t freshly grated gingerroot
- 1/2 t apple pie spice
- chicken broth
- 1/4 c water
- 2 t cornstarch
Directions:
Sprinkle chops with salt and black pepper. In a large skillet cook chops in hot oil until brown, turning once. Transfer the chops to a 3 1/2 -4 qt crock pot. Sprinkle apples, onion and raisins over chops. In a bowl stir together orange juice, broth, jalapeno pepper, garlic, gingerroot and apple pie spice. Pour over all.
Cover. Cook on low heat setting 6-8 hours or high heat setting for 3-4 hours. Transfer chops and fruit to a platter; keep warm. For sauce, measure juices; skim fat and add chicken broth if necessary to make 1 c liquid. Place in a saucepan. Combine 1/4 c water and cornstarch; stir into juices in pan. Cook and stir until thickened. Cook and stir 2 minutes more. Serve with orange-almond couscous.
