Orange-Almond Couscous


In a saucepan bring 1 c water and 1/4 t salt to boiling. Remove from heat. Stir in 2/3 cup quick-cooking couscous and 1 t finely shredded orange peel (use a microplane for best results). Cover, let stand 5 minutes. Stir in 2 T toasted slivered almonds.
