Ingredients:
In a plastic bag, combine the sweet potatoes, canola oil, taco seasoning, and cayenne pepper. Close and shake the bag until the fries are evenly coated. Spread the fries out in a single layer on two large baking sheets.
Bake for 30 minutes, or until crispy and brown on one side. Turn the fries over using a spatula, and cook for another 30 minutes, or until they are all crispy on the outside and tender inside. Thinner fries may not take as long.

I was skeptical about 2 tablespoons of oil being enough to coat all the potatoes, but it was plenty.
I cut my potatoes into wedges instead of fries.
I took the advice of some folks who commented on the original recipe. I sprayed my trays with Pam. I also cut my cooking temp to 400 and the time to 20 minutes per side.
I loved the spicy flavor, but the children couldn't handle it. Next time I'll use just 1 tablespoon of seasoning salt and skip the cayenne pepper and taco seasoning.
