Skillet-Style Onion and Sweet Potatoes


In a nonstick skillet, heat oil over medium heat. Cook onion, stirring frequently, until starting to caramelize.

Add potatoes and stock. Cover and bring to a boil. Reduce heat to medium-low and cook slowly, stirring frequently, for 15 minutes or until potatoes are tender. Season lightly with salt and pepper.
