Cold Cucumber Salad

Directions:
Peel and slice the cucumbers and put them in a large glass bowl. Sprinkle them with salt and vinegar; stir to coat. Cover and let stand for 30 minutes. Pour off the excess liquid and drain in colander for about 30 minutes to allow complete drainage. Add the mayonnaise, sour cream, dill and pepper, and mix well. Cover and refrigerate until serving time.

Casey - This has really really good flavor! I added some whole cherry tomatoes to it as well. It was a little to saucy, I will probably cut the mayo and sour cream in 1/2 for next time.

Kyle - SOOO perfect for the summer! Really light and yummy! I agree with Casey, though, and I think I'd cut the mayo/sour cream in half next time so it's not quite so soupy.

Cheryl - This is a great take on a summer standard. I prefer mine with onions, too - red, yellow, or scallions - makes no difference, I love them all!

Swati - Cut out vinegar, mayo and sour cream and add whisked plain yogurt instead. Also add chopped onions and tomatoes.
