Broccoli with Balsamic Butter Sauce
- 1 lb broccoli spears
- 1 T butter
- 2 T finely chopped shallots
- 2 T balsamic vinegar
- 1/4 tsp salt
- 1/4 tsp freshly ground black pepper
Place broccoli spears in a microwave-safe dish, add 1 T water. Cover with plastic wrap, vent. Microwave at HIGH 4 minutes or until crisp-tender, drain. Melt butter in a large nonstick skillet over medium-high heat. Add shallots, sauté 2 minutes. Remove from heat. Stir in balsamic vinegar, salt, and pepper, drizzle over broccoli.

I'm not a fan of the micro for this one. I'd rather dirty only the saute pan, y'know? I usually steam the broccoli right in the saute pan and then poor off the water before adding the rest.
