- 2 T. olive oil
- 1 medium onion, diced
- 2 (15 oz) cans diced tomatoes, undrained
- 2 T. balsamic vinegar
- 1/4 tsp. dried oregano
- 1/4 tsp. salt
- 1/4 tsp. black pepper
- 4 c. water
- 2 cans condensed chicken broth
- 1 pkg. cheese tortellini
- 1 pkg. frozen spinach, thawed and drained
In a large soup pot, heat oil over medium heat. Saute onion until tender. Add tomatoes, vinegar, oregano, salt and pepper; cook 5-7 minutes until heated through. Stir in water and broth and bring to a boil. Add tortellini and spinach. Cook 6-8 minutes until tortellini are tender.

I forgot to add the 4 cups water the first time I made it and it was great. I may leave out the water everytime I make it! This was incredibly easy and was a playgroup pleaser!
