Quick Shrimp and Corn Soup
Ingredients:
- 1 cup chopped onion
- 1 cup chopped bell pepper
- 1 garlic clove, minced
- 1/4 cup (6 oz) 1/3 less fat cream cheese, softened
- 2 cups fat-free milk
- 1 15 oz can cream style corn
- 1 10 3/4 oz can condensed reduced fat, reduced sodium cream of mushroom soup, undiluted
- 1 10 oz can diced tomatoes and green chiles, undrained
- 1 1/4 lbs medium shrimp, peeled and deveined
- 4 teaspoons sliced green onions ( I did not use these)
Directions:
Spray pot with cooking spray. Add onions, peppers and garlic- saute 5 minutes. Stir in cream cheese; reduce heat and cook until cheese is melted. Add milk, corn, soup tomatoes; cook 10 minutes, stirring occasionally. Bring to a boil. Add shrimp; cook 5 minutes or until shrimp is done.
Servings: 8 (1 cup each)
Time to Prepare: 20 minutes

The recipe book states that the whole pot is 40 total points, but I calculated it as about 25 instead.
