Ingredients:
Combine the chicken broth, milk, onion, bacon, salt and pepper flakes in a medium saucepan over medium-high heat.
Quarter the potato lengthwise, then cut into 1/4-inch slices. Add to saucepan. When mixture begins to boil, reduce heat and simmer for 30 minutes.
Add sausage to the saucepan. Simmer for 1 hour or until the potato slices begin to soften.
Add the kale to the soup and simmer for an addition 10 to 15 minutes or until potatoes are soft.
Servings: Serving size 1.5 cups, total servings 3

You can make this one healthier by using turkey sausage, turkey bacon and skim milk. I'm wondering if there'd be a better leaf to use than kale? Seems a little bitter. I've never actually done this one myself yet but plan to soon!
