Corn Chowder
Ingredients:
- 2 c chopped onion
- 2 T corn oil
- 3/4 c small-diced red pepper
- 1/4 c small-diced green pepper
- 2 t salt
- 1 T dry minced garlic
- 5 cups whole kernel corn, fresh or frozen, divided
- 2 c water from steaming corn
- 3-4 c additional corn water (plain will do)
- 1 t cumin powder
- 1/4 t ground white pepper
- 1/2 t thyme
- 1/2 t curry powder
Directions:
Saute onions, red pepper, herbs and spices in corn oil. (Do not saute green pepper; it is added at the end to retain color.) Steam of boil all 5 cups of corn; set aside 1 cup. When cool, blend 4 cups of corn with 2 cups of corn water, making a creamy consistency. Add to the sauteed vegetables and spices. Add reserved cup of corn and rest of water to obtain desired thickness. Simmer over low heat for 30 minutes. Add green pepper 15 minutes before serving. Garnish with a sprig of parsley if desired.

This soup is also nice with some ham or chicken added to it. You can sprinkle parmesan cheese on top for different taste.
