Baked Potato Soup

Directions:
Wash potatoes and prick several times with a fork. Bake at 400F for 1 hour or just microwave them until they are done. Let cool and cut potatoes in half lengthwise. Scoop out the pulp and set it to the side. Discard the skins.

Melt butter in a heavy sauce pan over low heat. Add flour, stirring until smooth. Cook one minute, stirring constantly. Gradually add milk. Cook over medium heat, stirring constantly until mixture is thickened and bubbly. Add potato pulp, salt, pepper, onions, bacon and cheese. Cook until thoroughly heated. Stir in sour cream. Add extra milk if necessary for desired thickness.

Enjoy.

Sometimes I top with bacon and cheese to make it more visually appealing.

Super Yummy but for us a once a year treat.

Lisa from Mass - This recipe is excellent. I actually made it with simply smart 1% milk, fat free sour cream and cabot 1/2 the fat shredded cheddar and it was unbelievable. I've been recently trying to experiment and cut calories and fat wherever possible without sacrificing taste and I must say not even my picky husband noticed the difference. I did leave the yummy bacon in there, there's no healthier subsitutes for bacon that gives it the same great taste.
