Chewy Granola Bars
Ingredients:
- 1/2 cup soft butter
- 1 cup brown sugar
- 1/4 cup sucanat
- 2 tbs honey
- 1/2 tsp vanilla extract
- 1 egg
- 1 cup whole wheat pastry flour
- 1 tsp cinnomin
- 1/2 tsp baking powder
- 1/4 tsp sea salt
- 1 1/2 cups rolled oats (long cooking)
- 1 1/4 cup 7 grain Kashi puff cereal
- 1 cup chopped nuts
- 1 cup golden raisons or chocolate chips (I do 1/2 cup of each, sometimes I throw in some unsweetened coconut too)
Directions:
In a mixing bowl, cream butter and sugars. Add honey, vanilla and egg; mix well. Combine dry ingredients; add to creamed mixture. Stir in oats, cereal and nuts. Add raisons or chocolate chips if desired. Press into a greased 13x9 inch pan. Bake at 350 for just under 20 minutes or until top is slightly browned.
Servings: 2 dozen

I originally found this recipe on a frugal family site and modified it to make it healthier. These are a great breakfast or snack and you won't feel guilty giving your kids more than one!
