Mashed Potato Casserole


Mix cream cheese and sour cream; add to hot potatoes. Blend until fluffy; add cream if necessary. Add garlic salt, pepper, and chives. Add baking powder and mix well. Turn into lightly greased 2-quart dish. Sprinkle with Parmesan, paprika, and dots of butter. Bake at 350 degrees for 50-60 minutes.

Additional Comments:
Erin - OMG, this is wonderful! Great flavor without being overwhelming. I served it with our Easter dinner... so easy to make ahead of time and just pop in the oven (instead of mashing potatoes, etc., as your guests watch). I think I'll be making it for every holiday meal from now on!
