Horiatiki Salata (Greek Village Salad)
Ingredients:
- 3 to 4 tomatoes, cut in wedges
- 1 cucumber, peeled and sliced
- 1 white onion, sliced (1/2 onion)
- 1 green bell pepper, sliced
- 1/2 cup kalamata olives (sub’d black olives will work)
- Several pieces of feta cheese
- 3 T olive oil
- 2 T red wine vinegar
- Oregano to taste
- Salt and pepper to taste
Directions:
Whisk oil, vinegar and seasonings together in a medium bowl. Add all veg and stir to coat well, then add salt and pepper to taste. Fold in feta; serve.
