Greek Chopped Salad

Ingredients:

Directions:
Chop all vegetables (remember to core and seed cukes and tomatoes to avoid soupiness) and mint leaves (mint is easy to chiffonade--roll a bundle of leaves into a "cigar" and then slice thinly).

Mix all ingredients in a large bowl and chill thoroughly.

The salad will get juicy over time--just lift off expressed liquid with a spoon, adjust salt to taste, and enjoy.

Time to Prepare: 20 min, depending on your knife speed

This would be very easy to make into a main dish by adding chopped cooked chicken--very fresh and light for summer, and savory but not too heavily seasoned for those hesitant about spice. *Great* for BBQs and potlucks!
