Cranberry Stuffed Acorn Squash
- 4 T butter, softened
- 1/4 c packed brown sugar
- 2 T flour
- 3/4 c quick-cooking oats
- 1/2 t cinnamon
- 1/8 t nutmeg
- 3/4 apple, cored and chopped
- 1 1/2 c cranberries
- 1/4 c pecans (optional)
- 1/4 c crushed pineapple (optional)
- 2 Acorn or Delicata squash, split and de-seeded
Mix first six ingredients until well blended. Add remaining ingredients, including any of the optional ingredients you wish to use (if any).
Mound stuffing mixture in squash.
Bake for 1 hour at 350*
If you only have one squash, remaining mixture may be baked in greased individual ramekins as apple-cranberry crisps.
Servings: 8 or more (or less if you really love squash)
Time to Prepare: 10 minutes plus baking time
