You can substitute 1/2 cup chopped cooked chicken for the shrimp.
SOOOO good! This has become a summer favorite. Wonderful flavor, and easy to make as many servings as needed. I usually omit the cabbage and peanuts. It takes no time to cook, though, so be sure to have everything prepared ahead of time.

Maria - This was delicious! i used chicken stock as my base instead of water, and served it with lime wedges..the peanuts were a very tasty addition.
