Shrimp & Bean Couscous

Ingredients:

Directions:
In a medium saucepan, cook couscous according to package directions, using broth instead of water. Set aside.

In a large skillet, heat oil over medium-high heat. Add pepper and cook 5 minutes. Stir in shrimp and sauté 3 minutes or until shrimp are opaque throughout. Stir in black beans and corn; cook just to heat through. In a large bowl, toss together couscous and shrimp-and-bean mixture with vinaigrette and basil.

SOOOOOO quick to toss together! I wasn't sure if it would have enough flavor, but it was really nice and light. I ate the leftovers cold the next day and it was still yummy!

You could substitute chicken very easily I would think. Or no meat at all for a great vegetarian meal or side dish!

Additional Comments:
RPM - Excellent-tasting, and very colorful. Lose the shrimp, and it makes a great side dish. Great summer meal when it's hot.
