Salmon-Feta Italian Pasta

Grill your salmon or place in the broiler on 500 for approx. 12 minutes.

Boil water for pasta.

In a LARGE saucepan, cover the bottom with 1 TBL of olive oil and heat to medium. When pan is hot add crushed garlic and sautee for 2 minutes; add spinach. (It seems like a lot but it will wilt down.) When spinach is wilted down add your grape tomatoes and stir occasionally. Water should be boiling now, add salt to season the pasta, add pasta and boil for 12-14 minutes. When salmon is cooked fork big pieces into the saucepan. Drain cooked pasta and add to the saucepan. Add feta cheese to the above combination and gently fold. Add remaining olive oil and fold again. Simmer on low for about 10 minutes. Add crushed pepper to taste.

The reason that I call this "Italian Pasta" is b/c like in many Italian dishes, the colors of their flag are displayed in the cuisine. Red for the tomatoes, white for the feta and green for the spinach. This is a delicious and healthful meal that could also be served cold.

Cristin - Very light and delicious, but suprisingly filling--this stays with you. A nice change from heavy pasta sauces!
