Sausage and Potato Skillet
- 4 large potatoes, peeled and cubed
- 1 pound smoked kielbasa, cut into small chunks
- 1 medium onion, chopped
- 1 can (7 ounces) mushroom pieces and stems, drained
- 1 tbsp. chopped fresh parsley
- Salt and pepper to taste
Spray large skillet well with nonstick cooking spray. Add all ingredients and cook over medium-high heat, stirring frequently, until potatoes are tender. Re-season with salt and pepper as needed.

This is an easy, quick "meat and potatoes" kind of meal. Good for the warmer months b/c it doesn't heat up the kitchen too much. We omit the 'shrooms, because we're not fans. Good with an easy veggie side (steamed brocolli is a standard).
