Sausage Polenta Bake

Ingredients:

In a large saucepan, combine cornmeal and salt. Gradually add boiling water, whisking constantly. Cook and stir over medium heat for 5 minutes or until mixture comes to a boil. Remove from heat and stir in Parmesan cheese

Spread polenta in a greased 9x13 pan. Bake, uncovered at 350* for 20 minutes. Meanwhile, brown sausage until no pink remains; drain if necessary. Add spaghetti sauce and cook for 5 minutes or until heated through.

Spread sauce over polenta; top with mozzarella cheese. Bake 12-15 minutes longer or until cheese is melted. Let stand for 15 minutes before cutting.

****This was so much better the next day that when I make it again I won't serve it until the next day. It re-heats well in the microwave.

Time to Prepare: 1 hour including cooking time- actual prep time much less

The polenta isn't set until the next day and I strongly preferred it when the polenta was set. This is an adaptable recipe- It would be good with chicken or with just the spaghetti sauce.
