Lemon Parsley Chops

Ingredients:

Directions:
Combine the minced lemon in a small bowl with the garlic, 1/2 t salt and 1/4 t ground pepper. Set aside.

Heat the olive oil in a large skillet over medium high heat. Season the pork chops with salt and pepper. Cook in the skillet until browned, 2-3 minutes per side.

Add 1/2 c water to the skillet; bring to a boil. Reduce heat to medium low; cover and simmer gently until the pork is cooked through, 8-10 minutes.

Transfer pork chops to a platter or serving plates; drizzle with the pan juices as desired, and sprinkle with the lemon-parsley mixture.

The parsley amount in the original recipe was overwhelming. I'd cut it in half the second time, and probably add more garlic (because we like it!!). This is great with buttered noodles or mashed potatoes, as well as a green vegetable (in our house - that means broccoli). Had a great taste, and the pan juices were a nice accompaniment.
