Mix together horseradish and bread crumbs until well blended.
Pat pork loin dry. Salt and pepper pork loin. Over medium heat, brown on all sides in olive oil. Remove from skillet and place on a baking tray or a low casserole dish.
Using a pastry brush, generously coat pork loin with dijon mustard. Pat crumb mixture onto pork loin.
Roast loin until internal temerature of 155 degrees is reached, about 25 minutes. Remove from oven and let rest 5 minutes before slicing. If bread crumbs are getting too browned during roasting, place a foil tent over pork loin.
