Dublin Coddle

Preheat oven to 350 F. Place sausages in a pan, cover with cold water and bring to boil. Reduce heat, simmer uncovered for 7 minutes, drain and cool. Cut the bacon into 3/4 inch strips.

Heat drippings in a pan, cook the bacon for 1 minute. Add the onion and cook until golden. Add the garlic and cook for 1 minute. Remove bacon, onion and garlic, drain on paper towels. Add the sausages to the pan and cook on all sides until well browned, remove and drain on paper towels.

Peel the potaotes and cut into 1/8 inch slices. Arrange the potato slices in the base of a large heatproof dish, top with the bacon, onion and garlic. Sprinkle sage and pepper over dish and add the chicken stock. Place the drained sausages on top, cover and cook in a preheated oven for 1 hour. Serve garnished with the chopped parsley.
