Crispy Breaded Pork Cutlets


Preheat oven to 425*. On a rimmed baking sheet, toss panko with oil. Bake, tossing once until golden brown, about 6 minutes. Transfer to a medium bowl. Reduce temperature to 400*

Meanwhile, place chops between two large pieces of plastic wrap and pound to make cutlets 1/4-inch thick.

Dividing evenly, coat pork with mustard and season with salt and pepper. One at a time, dip cutlets into breadcrumbs, pressing firmly to adhere.

Place a rack on a rimmed baking sheet and bake, without turning until opaque throughout, 10-15 mins.

I had 6 cutlets and so increased the panko by half and had a ton of panko left over. I'll probably have 6 cutlets the next time too, but I won't increase the panko at all.
