Blueberry and Bourbon Pork Tenderloin


Take pork and wrap in foil with all the spices. Bake at 350 to 375 for 1 hour. (or grill until cooked) For quickie time, purchase a tenderloin fully cooked at your deli.

While the pork is cooking, put blueberries in a sauce pan and warm until thin. (add bourbon)

Slice pork into medallions and ladle sauce over the meat serve hot!

Time to Prepare: 10 mins to 1 hour and 10 mins

This is a great and impressive dish, I serve it with cubed sweet potatos, turnips and white potato baked with garlic and sea salt.
