Stuffed Shells

Ingredients:

Directions:
Preheat oven to 350F. Spray bottom of 13x9x2 baking dish with non-stick cooking spray.

Cook shells according to package directions & drain (shells will not stick together if you add a tablespoon of oil to cooking water).

Crumble and brown sausage; when cooked, drain and rinse, return to pan & add marinara.

In large bowl, beat egg. Stir in ricotta, 1 3/4 cups of mozzarella, 1/2 cup of parmesan and Italian seasoning.

In pan, spread enough sausage & marinara mixture to cover bottom (about 1/3 of sauce).

Fill cooked shells with cheese mixture. Arrange filled shells in baking dish.

Cover shells with remaining marinara sauce, then top with remaining mozzarella and parmesan.

Bake, covered with foil, until bubbly, about 45 minutes. Uncover and continue cooking until cheese is melted, about 5 minutes. Let stand 5 minutes before serving.

Time to Prepare: 30-45 min, plus 50 min cooking time

AWESOME--super duper impressive for company, and kids love it. It is fairly time consuming and labor intensive to put together, so if I'm going to bother I make 2 pans at a time, one for us and one for a friend or the freezer. The easiest way to fill the shells: hold a shell in your left hand, holding it open with your thumb, and use a soup spoon in your right hand to scoop in the filling.
