Pumpkin Chocolate Chip Cookies
Ingredients:
- 2 1/4 cups whole wheat pastry flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp sea salt
- 1 tsp cinnamon
- 1/2 tsp ginger
- 1/4 tsp ground cloves
- 1/4 tsp nutmeg
- 1 cup of butter (soft)
- 1/2 cup brown sugar
- 1 cup sucanat
- 1 1/2 cups pumpkin puree
- 2 eggs (1 egg, 1 egg white)
- 1 tsp vanilla
- 2 cups of chocolate chips
Directions:
Combine dry ingredients in a medium bowl, set aside.
Using an electric mixer, whip up the butter, brown sugar and sucanat until fluffy. Add eggs, pumpkin and vanilla, mixing well. Slowly add the dry ingredients until well combined. Add chocolate chips.
Drop dough onto ungreased cookie sheets and bake at 350 for approx 10-15 mins.
Servings: About 5 dozen, depending on size

This makes a cake like cookie. I prefer to use a 9x13 pan and just make cookie bars, purely because I am too busy to keep baking trays of cookies all day. If you are making bars, bake about 20 minutes or until set.
