Coconut Tapioca Pudding
Ingredients:
- 4 1/3 cups of water
- 7 TBS small pearl tapioca
- 7 TBS sugar
- 1 can (14oz) of light coconut milk
- cinnamon if you want
- 1/2 cup shredded coconut if you want
Directions:
Bring the water to a boil. Add the tapioca while whisking. Cook uncovered for 17 minutes or until the pearls are about 1/2 translucent and 1/2 opaque. Add the sugar, coconut milk and cinnamon if using. Simmer for 5 more minutes. If using coconut add and simmer for 2 or 3 more minutes. Refrigerate until serving.
Servings: 6-8
