Put 1 t or a little more base in each cup of a paper-lined mini tart pan- press down firmly.
Top with 1 T cheese mixture
Bake 10 min at 375
Cool completely and top with 1 t cherries from a can of cherry pie filling.

This is an extremely adaptable recipe. At Halloween Iíll add a big spoonful of pumpkin pie filling and mini chocolate chips and use crushed chocolate graham crackers for pumpkin-chocolate chip cheesecakes. Iíve used a little bit of peppermint extract and crushed candy canes on a chocolate base- the possibilities are endless and they always come out perfect.
