Ingredients:
Roll teaspoonfuls of peanut butter mixture into balls. Refrigerate until ready to dip into chocolate mixture.
Melt chocolate chips and shortening on top of a double boiler until fully melted and well combined. Using a fork or a skewer, dip each peanut butter ball into the chocolate, leaving the very top of the ball exposed. Set on a greased cookie sheet or sheet of waxed paper. Refrigerate until chocolate is firm.
Servings: Makes about 3 dozen

Buckeyes are a favorite candy in Ohio- they look like the nut from a Buckeye tree (Aesculus glabra)- our state tree. I've tried several Buckeye recipes and this is my favorite- the graham cracker crumbs give the peanut butter center a little bit of crunch.
