Thai Chicken Thighs
- 6-8 boneless, skinless chicken thighs
- 1 cup salsa
- 1/4 cup peanut butter
- 2 Tbsp. lime juice
- 1 Tbsp. soy sauce
- 2 tsp. ginger root
- 1/3 cup chopped roasted peanuts
- 1/c cup chopped fresh cilantro
Put chicken thighs in crockpot and mix the salsa, peanut butter, lime, soy and ginger root and pour over chicken. Cook on low 6-8 hours. Serve over rice with a sprinkling of chopped peanuts and cilantro.

I don't enjoy the crock pot for this one. I usually do it in the oven in a roaster.
