Stuffed Cornish Game Hens


Make rice according to package directions. Mix in condensed soup (not diluted), wine and raisins. Stuff game hens.

Cover game hens and roast at 350* for an hour. Turn up heat to 400* and remove cover. Roast for an additional 15 minutes.

Cover and let rest 10 minutes, cut in half (or not, depending on size of hens) and serve.

If the hens come with giblets, you can boil the giblets for 5 min and chop and add to the stuffing if desired. For a slightly orange flavor, place an orange slice on each game hen prior to roasting.

Servings: 4-8
Time to Prepare: 1 hr 45 minutes including roasting time and time to make rice.

This is a very easy recipe to execute and fancy enough that I make it for guests. Make sure the dish you bake it in has high sides because the stuffed birds put off a lot of moisture.
