Picnic Chicken

In a large ziplock bag, crush/roll/pound saltines until almost powdery. A rolling pin works well for pounding and crushing. Add Lawry's, garlic powder, flour and salt & pepper. Pour out into a bowl.

Dip each chicken tender into milk, then into cracker mixture. Put in hot oil and fry until golden on bottom. Turn over and fry until other side is golden. Drain on paper towels. Serve hot or cold.

Nutritional Information: If the oil is hot enough, the chicken won't absorb it and this one won't be terribly unhealthy. Guilt-free chicken nuggets? Yes please!

Oh my gosh. This one is unbelievably good. We may never do KFC again, it's truly that good. It's extremely portable so it makes great picnic fare. RaDeanna (rih-deena) says the secret is to use fresh chicken tenders rather than frozen, and cutting them in half (nuggets vs. strips) cuts the cooking time. I used a bag of frozen tenders (let them thaw completely) and the end result was still very juicy.

I strongly recommend using un-salted Saltines and skip the added salt. The Lawry's has plenty of salt in it, the babies said it was too hot. hee.
