Put flour and seasoning salt in one plastic bag (shake to mix) and bread crumbs in another. Mix eggs and milk together in bowl. Drizzle bottoms of two 9x13 baking dishes with olive oil.
Working one piece at a time, place chicken in flour bag and shake to coat well, then transfer chicken to egg mixture. Turn to coat well with egg mixture, then transfer to bread crumbs. Shake bag until chicken is well coated with crumbs. Place chicken in pan. Continue until all chicken is breaded and half is in each pan, making sure chicken isn't crowded.
Bake uncovered for 30 minutes. Turn each piece over, then bake for 30-45 minutes more until chicken is done.
