Mexican Chicken Lasagna


Saute chicken breasts in a pan with seasoning. Cut cooked chicken into cubes.

Add salsa, drained black beans, and frozen corn to skillet with chicken. Mix well and warm through.

In a small casserole dish ( I usually use a 2.5 liter Corningware dish), put down a layer of chicken mixture.

Next, put a layer of corn tortillas on top, then cover with cheese.

Add another layer of chicken mixture, another layer of tortillas, and the rest of the cheese.

Bake in a 425 degree oven until cheese is melted and bubbly, apprx. 10-15 minutes.

Servings: We usually get 4 GOOD size servings :)
