Julie's Chicken aka Sweet & Sour Chicken
- 4 boneless skinless chicken breasts
- 1 package dry onion soup mix
- 1 small bottle Wishbone Russian salad dressing (must be this brand)
- 3/4 of 1 18-ounce jar apricot preserves
Combine soup mix, salad dressing and preserves. Place chicken in baking dish. Top with dressing mixture. Bake for 40 minutes at 425 degrees. Serve with rice.

I've also used a 3-pound package of chicken thighs and liked it even more. Sometimes I add a can of pineapple tidbits. Last time I used a store brand jar of apricot-pineapple preserves - so good!
