Golden Mushroom Chicken Fettucine
Ingredients:
- 6 skinless, boneless chicken breasts
- 1/4 c. butter
- 1 packet Italian dressing mix (Good Seasonings is reliable)
- 3/4-1 c. white wine
- 3/4 c. chicken broth
- 2 cans Campbell's Golden Mushroom condensed soup
- 8oz cream cheese (chive flavored or garlic & herb is great, if you can find it)
- 1 bunch green onions
- fresh mushrooms, sliced (optional)
- 1lb fettucine
Directions:
Cube the chicken into bite-sized pieces. In a large, deep skillet, sautee chicken in a little olive oil, with the white section of the green onions diced and added (I add some minced garlic, but it's optional). If you want to add mushrooms, now's the time--sautee them with the chicken and onion. Set aside when cooked through. To the skillet, add the butter; once melted, add Italian dressing mix, then wine, broth, cream cheese and Golden Mushroom. More wine or less wine are appropriate--just be sure the total broth + wine is 1 1/2-2 c. Stir until smooth; return chicken & veg to pan & stir to mix. Slice 2"-3" of the remaining greens of the green onions thinly and add to the chicken and sauce. Simmer, uncovered, for 10 minutes.
While the sauce is simmering, cook fettucine according to package directions to al dente doneness. Drain and gently fold together with chicken and sauce. Serve immediately.

It *really* matters that the soup be Golden Mushroom, NOT cream of mushroom (they're not at all alike). Flavored cream cheese adds some zest but isn't necessary for super-deliciousness. Jon love, love, loved this and the boys gobbled it at both first and second run. Suitable for company--the white wine gives it a subtle sophisticated crispness that's lovely. (Plus, you can drink the rest of the bottle with dinner--we don't want to waste it, do we?)
