Fiesta Chicken and Rice Bake
Ingredients:
- 1 can cream of chicken soup
- 1 cup picante sauce
- 1/2 cup water
- 1 cup whole kernel corn
- 3/4 cup uncooked regular white rice
- 4 skinless, boneless chicken breast halves
- Paprika
- 1/2 cup shredded cheddar cheese
Directions:
In a 2 quart shallow baking dish mix soup, salsa, water, corn, and rice. Place chicken on rice mixture. Sprinkle paprika over chicken. Cover. Bake at 375 degrees for 45 minutes or until chicken is no longer pink and rice is done. Sprinkle with cheese.

I precooked the chicken and the rice (I used brown minute rice) and then mixed it with the other ingredients minus the water. I put the cheese on top and baked until it melted. Yummy!
