Cordon Bleu Casserole
Ingredients:
- 4 cups cubed or shredded cooked chicken or turkey
- 3 cups cubed ham
- 1 cups shredded cheddar cheese (I used a mixture)
- 1/4 cup butter or margarine
- 1/3 cup flour
- 2 cups light cream (I used half and half and it was fine)
- 1 tsp dill
- 1/8 tsp dry mustard
- 1/8 tsp nutmeg
Topping:
- 1 cup bread crumbs
- 2 TB butter melted
- 1/4 tsp dill
- 1/4 cup shredded cheese
- 1/4 cup walnuts (optional)
Directions:
Preheat oven to 350. Combine ham, chicken, and cheese in a bowl. In a saucepan saute the onion in the butter until tender. Add the flour to make a paste then gradually add the cream stirring constantly. Bring to a boil and boil about a minute until thick. Add dill, mustard, and nutmeg. Remove from heat and mix with the meat/cheese. Put into a greased 9X13 pan. Toss bread crumbs with butter and dill, stir in cheese and walnuts. Sprinkle over the casserole. Bake for 30 mins or until heated through.
Servings: 8-12
Time to Prepare: 30-45 minutes not including cooking chicken

We really liked this. I did use evoo instead of butter for the onions and that worked also. A little labor intensive but worth it.
