Chicken and Stewed Tomatoes


Cut chicken into 8 pieces (2 breast pieces each cut in half again to make 4 pieces, 2 thighs, 2 drumsticks) Remove and discard wings and backbone or save for another use. Remove skins from thighs and breast pieces.

Place chicken on the bottom of a deep baking dish or Dutch oven. Add vegetables and top with stewed tomatoes.

Bake for 1 hr 15 min at 375.

Let rest for 10 min before serving.

Servings: 6
Time to Prepare: 1 1/2 hr including baking time.
Nutritional Information: Low calorie and low fat.

I've been making this recipe since college. The chicken is always super tender and the tomatoes give the vegetables a really nice flavor.
