Chicken Enchiladas
Ingredients:
- 2 boneless skinless chicken breasts cooked and shredded
- 4 tortillas (I use whole grain and they don't break like others I've tried)
- 1 onion, chopped
- 1 jar (14 oz) verde sauce
- 1/2 C sour cream
- 1 1/2 C shredded mexican cheese
Directions:
Preheat oven to 375
Spread 1/2 cup verde sauce in bottom of casserole dish
Mix chicken, sour cream, 1/2 cup cheese and 1/4 cup verde sauce
Fill tortillas with chicken mixture
Cover tortillas with the rest of the verde sauce
Bake 20 minutes (Sprinkle with cheese at the very end)
Servings: 4
Time to Prepare: 20 minutes of prep, 20 minutes to bake
