BBQ Chicken, Beans, and Rice
- 1 bag of dries red beans
- chicken (I used 3 leg and thigh quarters)
- 2 cups bbq sauce divided
- 1/4 cup packed brown sugar
- 1/4 chopped onions or some dried ones
The night before put beans on to soak or do quick soak method. Boil chicken and shred then add 1 cup bbq sauce and refrigerate. In morning drain beans and rinse. Place into crock pot with 1 cup bbq sauce, brown sugar and onions. Cook on low all day, then add chicken within the last few hours. You might need to add some water near the end depending on how juicy you want it to be.

It is good by itself, on torilla chips, or in a taco shell with cheese and lettuce.
I made this for a pot luck at church and had lots of compliments on it.
