Grilled Balsamic Chicken with Limes
- 3 tbs balsamic vinegar
- 2 cloves garlic, crushed
- 2 tbs olive oil
- freshly ground black pepper
- 4 chicken breast fillets
- 4 limes, halved
- wild rice and fresh greens for serving
Combine the vinegar, garlic, oil and pepper and pour over chicken. Allow chicken to marinade for 5 minutes. Remove chicken from marinade. Cook fillets under a preheated grill until cooked through. While chicken is cooking, place limes on the grill to caramelize. To serve, arrange salad greens on serving plates. Slice chicken and place on top of greens. Serve with limes and sprinkle with extra balsamic vinegar and a bowl of wild rice.
