Apricot or Peach Mexican Chicken
- 1 pkgs boneless skinless chicken breasts
- 1 pkg taco seasoning
- 1 can corn, drained
- 1 can black beans, drained and rinsed
- 1 jar salsa
- 1 small jar peach or apricot preserves
Brown Chicken. Add taco seasoning and stir well. Add the salsa and jelly--you may need to add a little water. Add corn and beans and heat through. Serve over rice.
Servings: It made quite a bit when I made it. I think I did 4 chicken breasts.
