Pumpkin Apple Muffins
Ingredients:
- 4 eggs
- 1/2 cup oil (I use safflower, anything w/o flavor)
- 1 cup applesauce
- 1 cup sucnat/ brown sugar/ honey(only use 3/4 cup)
- 2 tsp. vanilla
- 1 cup pumpkin puree
- 1 cup nonfat dry milk powder
- 2 1/2 cups whole wheat pastry flour
- 1/2 c buckwheat flour
- 1/2 cup oats
- 3 tsp baking powder
Directions:
Combine eggs, oil, applesauce, sweetner, vanilla, pumpkin and milk powder with electric mixer, mix until well blended.
Combine flours, oats and baking powder. Slowly stir wet mixture into dry by hand. Do not overmix.
Bake 350 for 25 minutes.
Servings: 18-24 muffins
