Oatmeal Blueberry Breakfast Bars

Directions:
Preheat oven to 350º.

Combine the whole wheat flour, baking soda, cinnamon and nutmeg. Set aside.

In a separate bowl combine the applesauce, honey, vegetable oil, and vanilla. Stir in the oats. Let this mixture stand for 10 minutes. Gently stir in the flour mixture, do not over mix. Add blueberries.

Bake in a lightly greased (or Pam'd) 13x9 inch baking dish at 350º for 15 to 20 minutes. Cool completely before cutting. Cut into 18 pieces.

I've made this one with raisins and also with dried blueberries. Both were very good. Don't be tempted to make it in a smaller pan, it really bakes up best in a 9x13. I think I'll try fresh blueberries next time, as I felt the dried ones didn't impart much blueberry flavor. Still, the kids love it, it's healthy and portable, and it's easy to use all organic ingredients if that's your bent.
