To make a basic muffin, use 5 1/2 cups of muffin mix and add 2 eggs, 2 egg whites, 3tbs vanilla, 2 cups water, 1/2 cup safflower oil, to make a batch of 24 muffins. All varieties can be baked in prepared tins, 18-20 minutes in a preheated 400 degree oven.
Servings: yield 120 muffins
Time to Prepare: 15 minutes to make mix, 10 to make actual muffins

The possiblities are endless with this great starter mix. I whip up a batch of muffins a few times per week-they are very healthy and dissapear at an alarming rate, great for playgroups! Our new favorite combo is substituting lemon extract for the vanilla and adding 1/2 cup of slivered almonds or 1/2 cup of unsweetened coconut! MMMMM!!!
