Egg & Sausage Casserole

Directions:
Place sausage in a large, deep skillet. Cook over medium-high heat until evenly brown. Drain, crumble, and set aside.

Preheat oven to 325 degrees F (165 degrees C). Lightly grease a 9x13 inch baking dish.

Line the bottom of the prepared baking dish with crescent roll dough, and sprinkle with crumbled sausage. In a large bowl, mix beaten eggs, mozzarella, and Cheddar. Season the mixture with oregano, and pour over the sausage and crescent rolls.

Bake 25 to 30 minutes in the preheated oven, or until a knife inserted in the center comes out clean.

Kyle - AWESOME dish!!! Perfect for brunch or Christmas morning!!! I used sage sausage and it was soooooo good! I also added a couple extra eggs and cut back on the cheese a little bit. I also prebaked the crescent rolls a little bit before layering with sausage and egg mix.

Nicole - It is even great when you realize you only have seven eggs and 3 cups of cheese instead of the 4 - and it is AWESOME as a midnight snack. Its good COLD y'all. Yummmmm.....

Anonymous - I make this at least once a month for my family...generally for supper, not breakfast. I use diced ham, sausage, bacon, two or three cheeses, if I have extra in the fridge. We like ours with the hot sausage, and pepper jack cheese. Huge favorite in my home...and the kids LOVE the cold leftovers for breakfast.

Anonymous - I have always made this with a pie shell, Looking forward to trying it with crescent rolls. I also always use the HOT sausage and sometimes add more red pepper.
