Pumpkin Bread

Grease and flour the bottom only of three 7 x 3 inch pans. Preheat oven to 350 degrees.

Measure flour, sugar, baking soda, salt, and spices into a large bowl. Whisk to blend. Add any optional ingredients and stir to coat. In a separate bowl, whisk together pumpkin, water, oil, and eggs. Mix wet and dry ingredients together until well combined. Pour batter into prepared pans.

Bake for approximately 1 hour.

Servings: Yield: 3 loaves
Time to Prepare: 10 minutes, plus baking time

I use 9x5 loaf pans and they turn out fine, they're just not as high as a regular loaf of bread. If you want large, square pieces of bread then you'd be better off making 2 loaves with the recipe and using a tester to determine doneness or using the smaller-sized loaf pan that the original recipe calls for. Greasing and flouring only the bottom of the loaf pan will allow the loaf to rise higher than a full grease and flour will.
